Tasty idli Recipe
Rava idli or semolina idli is a specialty from the South Indian state of Karnataka that is now popular throughout India.
Material
1 cup rava/semolina, coarse
1 cup curd
½ tsp salt
¼ cup water
¼ tsp eno fruit salt or a pinch of baking soda

Firstly, take a big pan and put in one cup of rava.
Cook it for about 5 minutes until it smells really good.
After that, let it cool down completely, and then move it into a mixing bowl
Add 1 cup curd, ½ tsp salt and mix well without any lumps.
Rest for 20 minutes or until the rava/semolina absorbs the water.
add in 1/4 cup of water, or as much as needed, to get the batter to the right consistency for making idlis.
Just before steaming the idli, add ¼ tsp Eno fruit salt or baking soda and give it a gentle stir.
Immediately pour the batter onto the greased idli plate.
Steam them on medium flame for 15 minutes or till the idlis are completely cooked.
Lastly, serve the plain rava idlis or plain semolina idlis with chutney and sambar for a delicious and satisfying meal. Enjoy

Notes:
firstly, fry the rava well otherwise the idli may turn sticky.
To make masala idli, add vegetables of your choice and tadka.
Additionally, incorporate sour curd into the batter to enhance the softness and sponginess of the idlis. Mix it thoroughly with the batter until well combined.

Ingredients to make Sambar?
Pigeon pea (Toor) dal – 1 cup
Tomato – 1
Bottle gourd chopped – 1/2 cup
Drumstick pod – 1
Cabbage – 1/2 cup
Cauliflower – 1/2 cup
Onion chopped – 1
Brinjal – 1
Capsicum – 1/4 cup
Potato – 1
Turmeric – 1/4 tsp
Mustard – 1/2 tsp
Curry leaves – 7-8
Dry red chilli – 1-2
Sambhar masala – 1 tablespoon
Tamarind – 1/2 tablespoon
Green coriander leaves – 2 tbsp
Asafoetida – 1 pinch
Oil – 1 tablespoon
Salt – as per taste
How to make Sambar?
To make Sambar, first wash all the vegetables including potatoes, tomatoes, onions, cauliflower and then cut them into small pieces and keep them aside. Now put tamarind in a bowl of hot water and prepare tamarind water by mashing it with hands. After this, filter the water through a filter. Now take a pressure cooker and put arhar dal and a cup of water in it. Also add turmeric powder and a pinch of salt to it. Now keep all the chopped vegetables in a small vessel and keep it in the cooker.
Very easy recipe for making dry potato curry
After this, cover the cooker with lid and cook everything till 3-4 whistles. Once the pressure cooker whistles, turn off the gas and allow the pressure to release naturally. This will ensure that the flavors are well infused and the sambar achieves the perfect texture.. After the pressure is released, open the lid of the cooker and take out the vegetable pot. After this, mash the dal well with the help of a spoon.
Now take a pan and add 1 tablespoon oil in it and heat it on medium flame. After the oil is hot, add mustard seeds, curry leaves, asafoetida and dry red chilli and fry for 10-15 seconds. After this, add finely chopped onion to the spices and fry until the onion becomes soft and turns light brown. After this, add tamarind water to it and cook. After cooking for 1 minute, add finely chopped tomatoes.
